Pumpkin Pancakes


These are one of the most moist pancakes I have ever had! They don't have a strong pumpkin flavor, but are super delicious!! They are pretty good for you too! (until you add the syrup!)


1c. whole wheat flour

1c. all purpose unbleached flour

3 Tbsp. honey

1 Tbsp. baking powder

1/2 tsp. sea salt

1 3/4c. milk

3 eggs, lightly beaten

3/4c. pureed pumpkin

1/4c. oil


Combine all ingredients. Heat griddle until hot. Pour 1/4c. fulls onto griddle until cook on first side. Flip and cook on other side then serve :)

you know i bet these would be good to add some cinnamon and a little nutmeg to the recipe!!!! almost like a pumpkin pie!!! if you did that you might be able to forget the syrup and add some light cool whip for the topping!
