Southwestern Egg Rolls


These eggrolls are super quick and easy! They are definately in my top 10 favorite meals too!


10 tortillas

1 large chicken breast, cooked and diced

1 box of frozen chopped spinach, thawed and drained

1 can of black beans, drained

1/2 c. frozen corn

1/3c. of jarred roasted red peppers, diced

1 1/2c. shredded colby-jack cheese

1/2 tsp. cumin

1/4 tsp. chili powder

1 Tbsp. parsley

1/2 tsp. salt

2 Tbsp. olive oil


Preheat oven to 400 degrees. Mix chicken, spinach, beans, corn, peppers, seasonings and 2 Tbsp oil. Spoon into tortillas and roll tucking in the ends. Line them up in a greased baking dish. Oil the tops of the rolls. Bake for 20-30 min. or until tops are golden brown. Serve with sour cream.
